Vegan Nachos w/ Homemade "queso"

Vegan queso Ingredients:
Produce:
1.5 Cups of white potatoes (chopped)
3/4 Cups of carrots (chopped)
1/4 cup of diced onions
1/4 cup of diced bell peppers
4 cloves of minced garlic (separated)
Pantry:
1/3 cup of nutritional yeast
3 Tbsp of oil
1 Tbsp of tomato paste
Refrigerator:
1 cup of Ripple Original Unsweetened Milk
1 Tbsp of Plant based butter
1 cup of violife cheddar shreds
1 cup of water
Seasonings:
1 tsp of vegetable bouillion
2 tsp of garlic powder
2 tsp of onion powder
2 tsp of McCormick garlic jalapeño
1 tsp of cumin
1 tsp salt
Optional: 1 - 2 Tbsp of pickled jalapeños
Instructions:
#1 - Fill a medium pot with about 4 cups of water, add chopped potatoes & carrots, season water with salt and bring to a boil. Let the contents boil until both the potatoes and carrots are tender. Drain & set aside
#2 - In a small sauce pan, add butter and 2 cloves of minced garlic and saute on medium heat until garlic becomes fragrant. Add milk and cheese shreds to pan and cook until mixture resembles a cheese sauce (set aside)
#3 - In a small frying pan, saute onions, peppers, & remaining garlic on medium heat until veggies become translucent
#4 - Add oil, potatoes, carrots, sautéed veggies, nutritional yeast, seasonings, tomato paste & cheese sauce to a blender and blend until smooth. If mixture is still too thick, slowly add water & blend until you reach your desired consistency
#5 - Give the queso a taste, and add additional seasonings to reach your desired flavoring. Set aside until ready to heat & serve
Vegan Nachos
Ingredients:
Produce:
2 cloves of minced garlic
1/4 cup of diced onions
Pantry:
1 can of black beans
1 cup of cooked quinoa
1 Tbsp of oil
Seasonings:
1/2 packet of taco seasoning
1 tsp cumin
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Additional ideas for nacho toppings:
Tomatoes
Scallions
Cilantro
Guacamole
Refried beans
Black olives
Sour cream (regular or plant based)
Salsa
Jalapeños
Taco Sauce
Instructions:
#1 - In a large sauce pan, saute garlic & onions with oil on medium heat until the mixture becomes fragrant
#2 - Add cooked quinoa, black beans & seasonings and stir until well combined. Give the mixture a taste & adjust seasonings if needed. Set aside until ready for serving
#3 - Build nachos using the quinoa & black bean mixture along with some of the queso (that has been warmed up). Then top with your favorite nacho toppings & ENJOY!
